Jindoken
진도켄
Jindoken is a Sinsa izakaya that scored an 8 out of 10 on this visit, and it's easy to see why — the futomaki alone is worth the trip. It's a giant roll packed with thirteen ingredients, including tuna, salmon, shrimp, avocado, and egg, so every slice carries a completely different combination of flavors.
The seasonal sashimi comes thinly sliced with the silver skin left on and fanned out across the plate, and the grilled fish arrives thick-cut, seared golden on the outside while staying moist inside. The cream jjamppong is another standout — a creamy yet spicy broth bubbling with mussels and seafood — and the isobe maki, Jindoken's signature dish that wraps sashimi around the roll instead of rice, rounds out a menu where every single side dish is done right.
What I ordered
Loved it
- 1 The futomaki's thirteen-ingredient filling
- 2 Sashimi sliced thin with the skin left on for extra freshness
- 3 A signature isobe maki that swaps rice for sashimi
